Happy July! Lately it's been too hot to bake so I'll write you a little bit about myself and my daily routines. My normal everyday routines change slightly in the summertime, especially during holidays. However, my core routines stay more or less the same year-round.
This weekend we celebrate Midsummer, a celebration of the midnight sun, gottage life and magical summer nights. It's one of the most important and joyful holidays for Finns and, of course, summery foods like new potatoes and strawberry cakes are important part of it.
I'm completely obsessed with making nice cream at home. I think I've already eaten more ice cream this summer than last year in total. But I'm not worried about it at all, especially when it is a superfood combination of bananas and spirulina.
Waffles are one of the best desserts in summer and summer is way too short for bad waffles. That's why I prepared this amazing recipe for the most wholesome and delicious waffles. The waffles are eggless and made of buckwheat, oats and corn starch, so they are also gluten-free and vegan and most importantly, absolutely charming.
You know, there's something irresistible about crunchy and crispy foods and seed crackers are definitely one of them. I've made these gluten-free seed crackers for many times already, but I haven't written the recipe in here until now.
